    Irish Cream Truffles

    Ganache:
    8 oz dark sweet chocolate
    3/4 c. heavy cream
    1/4 cup Irish Cream Liqueur

    Dipping:
    16 oz. dark sweet chocolate
    1/4 cup vegetable oil

    Garnish:
    2 cups chocolate sprinkles

    When ganache has cooled to room temperature, add Irish cream before refrigerating. Roll dipped truffle in chocolate sprinkles.
